The Best Apple Pie Smoothie

I don’t really know how to do this apple pie smoothie from The Blender Girl Smoothies book justice except to say that it is absolutely scrumdidiliumptious! For those of you with greater articulacy and more clarity of expression you may be able to accurately find real words out of the dictionary that adequately prepare the palate for this taste sensation.

But today, I must resort to fictional words in fantasy movies where anything is possible. Actually, perhaps I should steal a phrase from Mary Poppins, and tell you that, in my opinion, this smoothie is “practically perfect in every way”. And I don’t think I’ll need to eat humble pie.

This apple pie smoothie is incredible, and conjures up memories of everything I love about a great piece of apple pie – the creamy buttery apples with a hint of cinnamon, and covered with a melting scoop of vanilla ice cream. This smoothie satisfies the need for a slice of pie without the need to bake.

I’m not a fan of sickly-sweet, syrupy apple pies. So, in the spirit of replicating my perfect bite of apple pie, I’ve held back on the sweetener in order to let these apples shine. The raw cashews add a nutty pastry flavor, and the cinnamon and vanilla perfect the blend.

Vegan Apple Pie Smoothie

This vegan apple pie smoothie tastes just like apple pie a la mode, and takes less than 5 minutes to blend up!

Ingredients

optional boosters

  • 1 tablespoon lucuma powder
  • 1 cup (44g) firmly packed baby spinach
  • 1/2 cup (60g) frozen raw cauliflower florets
  • 1/2 teaspoon (1g) probiotic powder (see notes)

Instructions

  1. Throw everything into your blender (including any boosters) and blast on high for 30 to 60 seconds until smooth and creamy.

  2. Made the apple pie smoothie this morning after my run. Very thick and filling! I added spinach to the recipe to give it a little nutrient boost but the flavor was creamy apple goodness. Well done!

    What a great blog! I lost 70 pounds through juicing (before and after photos on my blog). My blender had a big role to play in this.

    Juicing also made me a vegetarian and this last month I have been eating (or drinking!!!) vegan.

  9. I am planning to make this for breakfast tomorrow! I never considered lecithin for thickening…thank you I will try that especially since I am one of the few people wo hate avocado in my smoothies, idc how creamy and thick it makes them I don’t like how it “breaks” and doesn’t pour. Love your website!

  11. I loved this smoothie! I tweaked it a little, used almond milk and honey instead of cashew milk and stevia. But it was still excellent! This one’s a keeper!

  12. just tried this one this morning (we used regular milk due to tree nut allergy) and it was a hit. I used applesauce but thanks for the tip on making home made applesauce (I just got a Vitamix so I’m a novice and appreciate the helpful tips & I also didn’t know how to stew apples):) The first smoothie I tried was a berry one but being new to Vitamix I messed up & didn’t let them pulse long enough so the kids felt it was too “grainy” (frozen raspberry/blackberry) next time I’ll let it run longer. I could drink this apple one daily though!

      Yes, keep the machine on for about 30 seconds and all of your smoothies will be smooth and creamy. Don’t worry if the smoothie heats a little. Just add some ice cubes. Can’t wait to hear what else you make 🙂

  13. This looks pretty tasty. I recently started drinking smoothie recipes for breakfast and it has helped me lose weight. It is pretty easy too because I make more servings and then I have a quick easy breakfast during the week.

    1. I haven’t tried this warm. It should be absolutely fine if you slightly warm it. Like warm apple pie. YUMMO. Hope your little one feels better soon 🙂

  14. I just made this for my lunch and I must admit it’s really good! I’m starting to be a real smoothie junkie! I can have a shake for breakfast, lunch or dinner. Anyway, the combination of cashew nuts, apple and cinnamon is deliiiiiiicious!

  15. This shake is great. I have started a raw food diet and needed the pick up. I added a raw sweet potato and I did not stew the apples and used no sweeter or milk and it was still amazing

    1. Oh….thankyou. I love this one too. It’s just so easy and delicious. But, yeah…it’s pretty hard to beat that cheesecake smoothie. Have you tried the tastes-like-ice cream kale shake? Oh My….   17. Just made this and loved it! It is SOOO cold right now, I increased the almond milk, left out the ice, and ran the Vitamix until the smoothie was very warm.( but not hot like soup)
    Just like fresh baked apple pie, and so comforting on a cold day!
