These raw prune energy balls with pecans, goji berries, cacao, cinnamon, and cayenne are super delicious and really easy to throw together in your food processor for a quick dessert or brilliant mid-afternoon snack.

Most energy balls contain dates. But prunes have a lower GI, and so are better for weight loss. Plus, adding the pecans  decreases the insulin spike from the sugar hit.

These raw prune energy balls come from Lola Berry, nutritionist and author of The 20/20 Diet.

Raw Prune Energy Balls

Ingredients

Instructions

  1. Throw the pecans, prunes, goji berries, cacao powder, cinnamon, cayenne, and salt in a food processor fitted with the s blade, and pulse until the ingredients are rustically chopped and well combined.

  2. With a tablespoon measurer, scoop the mixture out, and roll into balls. Place the 1/2 cup shredded coconut on a plate or cutting board, and roll the balls in the coconut until evenly coated. 
  3. Store the balls in a sealed container in the fridge.

  3. ooo, I LOVE the idea of doing these with prunes!! Every other recipe I see uses dates, but I love the flavor of prunes and have a big bag at home – going to make this when I’m back for sure!!
