This cauliflower fried rice recipe with sesame, ginger, and shiitakes will blow your mind! It is easy to make, and is gluten-free, grain-free, and vegan.

Sesame Ginger Shiitake Cauliflower Fried Rice

As promised, here is my favorite cauliflower fried rice recipe. Ever since cauliflower rice swept the world a few years ago, I have been inundated with requests for cauliflower rice recipes (see a list at the bottom of the post), and cauliflower fried rice recipes. I apologize that it has taken me so long to post this recipe!

But, better late than never, and I assure you, this cauliflower fried rice is well worth the wait. This dish is really easy to throw together (once you’ve riced your cauliflower and chopped your other ingredients), and has a fabulous flavor that will make you weak in the knees.

I’ve tried quite a few cauliflower fried rice recipes on the web, and there are some nice ones. But, I still keep coming back to this cauliflower fried rice with sesame, ginger, and shiitakes from The Decadent Detox 14-Day Live-Guided Cleanse. It is just epic, and I don’t mind sayin.

The crazy-amazing combo of toasted sesame oil, tamari, chile, ginger, garlic, green onions, and cilantro with the shiitakes is pure magic.

This cauliflower fried rice is gluten-free, vegan, anti-inflammatory, low carb, and is fantastic for detox, and you can fry it up in less than 10 minutes!

How To Make Cauliflower Fried Rice 

As I said in my Cauliflower Rice post where I shared the two ways to rice cauliflower and the two methods of cooking cauliflower rice, either on the stove top or in the oven. For a plain cauliflower rice that is simply tossed with fresh herbs and served as a side dish with veggies, curry, or in a salad, I prefer to cook my cauliflower rice in the oven for the best flavor and texture, and to get a nice slight browning.

However, when you’re making cauliflower fried rice, you obviously have to fry it on the stove.

I use a wok or a deep skillet, and for the best results with cauliflower rice, you want to use a pan that doesn’t stick.

So, once you’ve prepped all of your ingredients and riced your raw cauliflower (see instructions for making basic cauliflower rice in this post), place your wok or deep pan over medium-high heat, and warm the oils. Then throw in your aromatics. In this recipe, I’m using chile, ginger, garlic, and onions. Diced red onion works well in cauliflower fried rice. But, I really like finely chopped green onion, which not only adds great flavor, but also beautiful color.

Then, add your star vegetables flavors, and cook for just a few minutes to soften. I’m using mushrooms in this recipe. They cook very quickly. Other quick-cook options are celery, bell peppers, and zucchini.

If you’re using carrots, beets, sweet potato, parsnip, or other root veggies that take longer to breakdown, you’ll want to sauté for longer. Another option is to pre-roast finely diced veggies and add those. Little cubes of roasted beetroot, sweet potato, carrot, and parsnip are incredible in cauliflower rice.

Then, add your cauliflower rice and any sauce (I’m using tamari in this recipe), and sauté for a further 5 to 10 minutes, until softened. The cauliflower does not take long to cook. Then, stir through any fresh herbs, nuts, and seeds, and tweak seasonings and flavors to taste.

To cook the cauliflower rice most evenly, you can place a lid on the skillet or work to allow the cauliflower to steam while cooking. But, stir every minute so that the cauliflower cooks evenly, doesn’t burn, doesn’t clump and stick together, and has a consistency that most closely resembles conventional fried rice.

Sesame Ginger Shiitake Cauliflower Rice

This cauliflower fried rice recipe with sesame, ginger, and shiitakes will blow your mind! It is easy to make, and is gluten-free, grain-free, and vegan.

Ingredients

  • 1 large head cauliflower
  • 2 tablespoons grapeseed oil
  • 2 tablespoons toasted sesame oil
  • 1 small green chile, ribbed, seeded, and minced
  • 2 tablespoons minced fresh ginger
  • 4 teaspoons minced garlic (4 cloves)
  • 6 green onions, finely chopped (white and green parts)
  • 4 cups finely chopped shiitake mushrooms
  • 2 tablespoons wheat-free tamari plus more to taste
  • 1 bunch cilantro, finely chopped (1/2 cup)
  • 2 teaspoons fresh lime juice, plus more to taste
  • 1/2 teaspoon Celtic sea salt, plus more to taste

Instructions

  1. To make the cauliflower rice, roughly chop the cauliflower into florets, and discard the leaves and the tough middle core. Throw the cauliflower pieces into a food processor fitted with the S blade, and pulse a few seconds until the cauliflower is the consistency of rice. You should end up with about 5 to 6 cups of cauliflower “rice”.

  2. In a wok or deep skillet, heat the oil on medium-high heat, and sauté the chile, ginger, garlic, green onions, and mushrooms with 1⁄4 teaspoon of salt for about 5 minutes, until soft and well combined. Throw in the cauliflower rice and tamari, and sauté for a further 5 minutes, until softened. Stir in the cilantro, lime juice, and remaining 1⁄4 teaspoon of salt, and tweak flavors to taste.
