I got this vegan plum crumble recipe from the Eating Clean cookbook by Amie Valpone.

Amie works as a private chef, nutritionist, and photographer in New York. Amie consulted with numerous doctors and used clean eating to help heal herself from a variety of ailments including, lyme disease, polycystic ovarian syndrome, hypothyroidism, and adrenal fatigue. This journey back to wellness inspired the Eating Clean cookbook.

In the first part of the book, Amie shares her 21-day elimination diet; 2-week detox meal plan; 8 steps to clean up your diet and household; tips for reading food labels; anti-inflammatory pantry list; smart substitutions lists; healthy travel and dining tricks; on-to-go snacks; a guide to personal care products; probiotic-promoting foods; soaking and cooking nuts, seeds, and grains; and a ton of other information about clean living.

Then, she shares the recipes that brought her back to optimal health. There are quick easy ideas for breakfasts, snacks, soups, salads, mains, sides, and low-sugar sweet treats. Some of my favorites include: mushroom, kale, and caramelized onion savory oats; breadless coconut vanilla french toast; parsley sunflower crackers; sunrise nori wraps; creamy tarragon cauliflower soup; spicy honeydew melon and cucumber gazpacho; pear and fennel soup; peach arugula salad; butternut squash and kale salad; lemon basil millet burgers; chimichurri sweet potato salad; cauliflower parmesan; basil and mint summer squash noodles; pumpkin gelato; raw chocolate banana tart; grain-free fudgy brownies; and this quick easy plum crumble.

Making a quick easy raw crumble with seasonal fruit and raw nuts satisfies a craving for something sweet without the additives that feature so prominently in many crisp recipes. In this raw version, Amie tossed her plums with raw honey. I used pure maple syrup and a pinch of salt, to make this vegan, and it was delicious. Pecans and walnuts are always a hit with dates and cinnamon. You could also add in some raw coconut flakes. Either way, this vegan plum crumble is sweeeeet!

Instructions

  1. Combine the dates, pecans, walnuts, hemp seeds, vanilla, cinnamon, and salt in a food processor fitted with the s blade, and pulse until the mixture has the consistency of rustic bread crumbs. Transfer to a small bowl.
  2. In another bowl, toss the plums with the maple syrup until evenly coated.
  3. Divide the plums between four bowls. Spoon equal amounts of the crumble on top of the fruit. Serve with a dollop of cashew cream and a sprinkle of cinnamon. Serve immediately.
