This amazing allergy free waffle recipe is from the Everyday Classics by Alexa Croft.

I got an amazing new waffle maker a few months ago to make waffles and pancakes for my niece and nephew when they come to visit next month, and I have been making lots of waffles to get them just right! Vegan and gluten free waffles can be really tricky. They are either too gooey, or heavy, or too crispy. It took me forever to perfect the gluten-free vegan pancake waffle recipe in my new cookbook and so when I made Lexie’s recipe I appreciated how many trials it would have taken her to get them so good.

Lexie says of these waffles: “Served hot off the iron, these waffles are crispy on the outside and moist on the inside. I actually prefer them to the egg batter Belgian waffles I used to make. They are much more filling and sustaining. Like a hearty bowl of hot cereal, they stick to your ribs. And not to worry, buckwheat is of no relation to wheat. It is actually a fruit seed hailing from the rhubarb family and is one of the best sources of protein in the plant kingdom.”

These vegan gluten free waffles were so easy to make. The recipe is fabulous. But, I also love my waffle maker, which helps you make allergy-free waffles so easily. I have the 4-slice Smart Waffle (it also comes in a 2-slice version) it handles all kinds of waffles so easily because the cooking time is automatically calculated for you to suit the waffle style and color. You can select Classic, Belgian, Chocolate or Buttermilk, and your preferred color from light to dark, and then you just pour the waffle batter in and the machine does the rest! I am a bit of a control freak and so I love the custom setting which allows you to set your own waffle style which can be helpful when making allergy-free, gluten-free, and vegan waffles. This machine is so easy to clean too. There is this huge wrap around moat that catches all of the drips and batter overflow. I just allow the machine to cool and use some paper towel or a damp cloth.

I have made Lexie’s recipe 3 times already and I even froze some so I can get my fix while I am watching yet another episode of House Of Cards. (so addicted!)

Vegan Gluten Free Waffles

  1. Oil and preheat your waffle iron.
  2. Add all of the ingredients except the baking powder in the order listed to the container of your blender. Cover and blend on high until smooth.
  3. Add the baking powder. Cover and blend on low for 5 seconds or just until incorporated. Let batter rest for 1 to 2 minutes. 
  4. Pour the batter onto the hot waffle iron. Cook for 4 to 5 minutes or to desired crispness.
  5. Repeat, oiling the iron between each waffle.
