This spicy vegan chocolate pudding is super easy and absolutely divine.

Hello, my name is Tess, and I am a chocoholic. My sister says, “A chocolate a day keeps the grouchies away.” But, too much chocolate on the lips can put unwanted inches on the hips. Some time ago I suggested she switch her daily indulgence to dark chocolate so she could still enjoy the mental health benefits with less fat and sugar. She struggled at first, but embraced the dark side, and now, like me, only eats the good stuff.

However, switching to dark chocolate is only Step One in our Twelve-Step program. In this post we’re leaping ahead to Step Ten:

“We accepted that we were powerless over chocolate pudding, but found that we could embrace a dairy-free, gluten-free vegan chocolate pudding that was quick, easy, and no less than sublime”.

But proceed with caution. This vegan chocolate pudding is deceptive, and will kick even the most sober cream and sugar addict back into denial. I’ve served this to many a cream dreamer and received rave reviews.

This vegan chocolate pudding is a beacon of hope for even the most self respecting dairy devotee. Everything comes to the party to create the perfect blend of sweet and spicy. The tofu offers a good amount protein a lovely creamy texture, the cacao adds the rich decadence that is a prerequisite of any great chocolate dessert, and the nut butter, vanilla, and red pepper flakes inspire flavor fever.

I don’t eat peanut butter because of the carcinogens, but if you’re not opposed it does add fabulous flavor. Hazelnut butter is amazing, as well. You can add any nut butter of your choice. The nut butter takes the edge off that chalky tofu flavor that make a lot of soy puddings unpalatable.

If you’re not into spicy notes or making this pudding for children omit the red pepper flakes and substitute ground cinnamon to taste. Either way, serve this vegan chocolate pudding with cream, berries, and walnuts, and devour.

Spicy Vegan Chocolate Pudding

Ingredients

  • 1 (12oz/300g) pack organic firm silken tofu
  • 1/3 cup (27g) cacao powder, plus more to taste
  • 1/4 cup (60ml) pure maple syrup, plus more to taste
  • 3 tablespoons (48g) raw almond butter (or peanut butter)
  • 2 teaspoons (10ml) natural vanilla extract
  • Pinch of red pepper flakes, plus more to taste
  • Pinch of Celtic sea salt
  • cashew cream (or soy cream), to serve
  • 1 cup (160g) fresh raspberries, to serve
  • 1/4 cup (30g) crushed raw walnuts, to serve

Instructions

  1. Throw the tofu, cacao, maple syrup, almond butter, vanilla, pepper flakes, and salt into your blender, and blast on high for about 30 seconds until smooth and creamy. Tweak cacao, maple syrup, and chile flakes to taste.
  2. Transfer the mixture into four martini glasses or bowls, and chill in the fridge for about 2 hours to thicken.
  3. Serve topped with a dollop of cashew cream, fresh berries, and walnuts.
