Lemon Cashew Dressing

This lemon cashew dressing is a staple in our house.

The weather has been absolutely gorgeous this week, and I’ve been making a ton of salads and sitting out on the terrace enjoying the last of the sunshine.

I love shredded kale and cabbage slaws, and my go-to creamy dressing is this creamy lemon cashew blend. Tweak lemon juice, garlic, and salt to taste. I like a rich flavor, but you may prefer a lighter dressing. If so, hold back on some of the garlic, and add to taste.

Blend up this lemon cashew dressing for your next salad and you won’t be disappointed. It is deelish!

  1. Throw everything in your blender, and blast on high for 30 to 60 seconds until smooth and creamy. Tweak lemon juice, garlic, and salt to taste.

  2. I made this for a kale salad. I used blanched almonds (alkaline). Next time I may add a little more almonds and less olive oil. It was FANTASTIC!! It almost tasted like it had cheese in it. I am going to use it sometime as an alfredo sauce. So, so good! Thank you for sharing!

    1. You can soak cashews the slow way for 2 hours by covering with filtered water, then rinsing and discarding the soaking liquid. Or, if you’re in a hurry, you can soak the quick way by pouring boiled water over them and soaking for 10 minutes. This method softens them for blending but kills live enzymes.

  3. I noticed you recently updated the recipe since I began making this dressing with the super slaw about 1 year ago. The changes are perfect, great and amazing! Adding the onion powder rounds out the flavor to perfection! Thank you!

  4. This dressing was super runny as-is. Luckily I had 1 cup of cashews soaked so I added the whole cup and it worked out perfectly. Very tasty!
