I got this savory granola recipe from Kathy Hester’s book, OATrageous Oatmeals.

Kathy says of this granola, “One of the reasons I love curry is that it blends spices used in desserts with savory and fiery flavors. Because of that, this granola straddles the line between savory and sweet. Try it as a delicious topping on soups or a great change of pace to your normal morning yogurt.”

I’ve been enjoying this savory granola as a trail mix in my car.

This cookbook change the way you think about oatmeal. Kathy shares inventive plant-based recipes that utilize oats in creative ways.

For those of you not familiar with Kathy, she specializes in making healthy foods accessible to picky eaters, and shares her recipes on her blog, Healthy Slow Cooking, and in her vegan column for Key Ingredient. She is also the author of The Vegan Slow Cooker, The Great Vegan Bean Book, and Vegan Slow Cooking for Two or Just For You.

Kathy serves up some really creative oat recipes in her latest book. There is also an explanation of the different kinds of oats, and how to cook them. There are oat-based staples such as creamy cashew-oat cream cheese and oat roti bread; then breakfast options like banana oatmeal cookie pancakes, lemon blueberry waffles, Kheer (Indian Oatmeal) Oatmeal, pomegranate rose smoothie, and a chai-spiced oat shake.

There are also great ideas for main dishes like chickpea veggie soup, creamy butternut squash oat soup, mushroom ginger congee, yellow split pea and rolled oat dal, steel-cut oat bean chili, veggie oat taco mince, tempeh oat brussels sprout scramble, oat dosa, and cauliflower oat pizza crust. Then, there are the desserts, such as oatmeal cookie crusted apple crumb pie, bourbon oat shortbread, and turtle oat truffles.

Beyond food, there is a great recipe for a soothing lavender oat bath soak, oatmeal cookie body scrub, and some doggy biscuits and kitty treats.

Instructions

  1. In a small bowl, mix together the warm water and flax meal, and allow to stand for 10 minutes until a paste forms.

  2. Preheat the oven to 350°F (180°C), and line a cookie sheet with parchment paper.
  3. In a medium-sized mixing bowl, combine the flax paste with the other ingredients.

  4. Pour the mixture onto the prepared cookie sheet and press thin. You should have one large, flat piece about 1/4 to 1/8-inch thin. Bake for about 20 minutes, until the edges are browned and the middle is no longer wet.
  5. Remove from the oven, and allow the mixture cool on the cookie sheet. Once cooled, break it up into large or small chunks with your hands. Use it to top salads or plain yogurt, or for a snack.
