Tastes-Like-Cheesecake Lemon Smoothie

This lemon smoothie tastes like a melted slice of lemon cheesecake. I need to warn you, this one is hard to quit making.

This has a tangy lemon taste on the front end, then a touch of sweetness and creaminess from the cashews and banana in the middle, and then a zesty lemon twist on the back end. I’ve fallen in love with the Sprout Living lucuma protein powder, so I’ve included that as an optional booster. That addition makes it even creamier.

For the creamiest results (particularly with conventional blenders) soak your cashews. You can soak the quick way by covering in boiling water for 10 minutes, then draining. Or soak the slow way and activate them for 2 hours with filtered water, then drain, and rinse. Do not use the soaking liquid for the cashews in the smoothie.   1. Throw everything into your blender (including any boosters) and blast on high for 30 to 60 seconds until smooth and creamy.

  2. Just made this with a few subs and it it nothing short of awesome. Thank you for sharing it, Tess! I used almond milk instead of water; skipped the dates, used Stevia instead; subbed avocado for the banana, and skipped the lemon juice–was quite tart with zest and lemon. Added pinch of xanthan gum . Heaven. Thank you!

  5. Hey Samantha,
    This is not the most low-calorie smoothie. with the dates, banana and cashews. It is all about the fun. I would not drink this every day, and certainly not if you are trying to lose weight.
    I recommend finding about 10 sweet (just fruit not any additional sweeteners except stevia) and savoury smoothies that you like the taste of and rotating them every morning so you get a nice blend of nutrients and flavours.     Look at any of my green smoothie recipes except the sweet pistachio ice cream kale shake, which tastes AMAZING but is not low calorie. You can enjoy every once and a while as well as this smoothie but not every day…..

    Thanks so much for your helpful advice. I have picked four smoothies from your website, two are green which I will start with today/tomorrow and see how I go. I will try the Lemon Cheesecake as a treat next weekend after a week of green smoothies. I have 10 kgs to loose and like the idea of smoothies as I have a Vitamix which I have hardly used!

    1. I know…aren’t they AMAZING for that.
      We would be LOST in the vegan world without them 🙂
      They are the quickest, most delicious way to satisfy the cream dream cravings and replicate that delicious flavour.

  8. This is really easy to make. I never thought of using rice for the making smoothies. Can I just use any rice for this one?

    1. You won’t get exactly the same cheesecake flavour, but you can use rice milk in this smoothie and it tastes delicious.

  9. I am as obsessed with your blog as I am with my Vitamix…and this smoothie is currently the king pin. I go to bed excited at the thought of waking up to a new day and being able to make another one! But tonight Im excited to try your banana coconut pie greenie, it will no doubt be as amazing as all the others.

But, I havent been able to try the pistachio kale one, as I just cant find kale ANYWHERE where i am in Aust, ever….may have to try my hand at growing my own?!

          1. Yeah, Im not in a city… strangely it can make things (even fruit & veggies) harder to find. My fruit market got it once about 3 years ago, but never again. I think I will go have a chat with them & see what they can do. 🙂

  12. This looks really yummy, but I do have a question. Why does this call for lemon peel and zest? Isn’t that the same thing? Are you saying to peel a whole lemon and use the peeled skin and the flesh of the inside minus the seeds? I don’t get why it would also called for lemon juice opinion you add a whole lemon? Thank

    1. Sorry if this is unclear. You use the zest but not the peel. You use the flesh as well as juice another lemon. It’s how you get a really lovely deep lemony flavour.
