Cilantro Mint Chutney

This cilantro mint chutney is mind-blowing! And it is so easy to make. Just throw everything into your blender. Serve with savory crepes and curry for an incredible dinner.

Yesterday, I shared a vegan potato, cauliflower, and green bean curry I’m making for my Bollywood banquet this Saturday night. So, I had to share this cilantro mint chutney that is also on the menu.

If you want to follow along, I’m also making chickpea crepesspicy cashew dipgreen pea and almond dipgarlic green beans, curried sweet potatoes, mango cardamom lassis and banana lassis.

I absolutely love chutney because it’s such a versatile condiment that adds a touch of magic to curries, stir-fries, and grains. The flavor combinations are endless. But, I always go back to mint, cilantro, citrus, and chile. It is just blendsational. Serve this chutney with roti, naan, or my chickpea crepes. Oh…they are just so good together.

I make double, triple, and quadruple batches of this chutney because I can never get enough of it. It freezes really well, too. When you defrost it, throw it back into your blender to revive the prize.

Oh, how I love my blender. Is there anything she can’t do?

I’m giving my mum and sister a Pro Line® Series blender for Christmas this year. My sister has all silver appliances and my mum has white. I love that I can give them both a blender to match their stand mixers.

Cilantro Mint Chutney

This cilantro mint chutney is vegan and gluten-free, and super easy. Throw everything into your blender, and serve with crepes & curry for a healthy dinner.

Ingredients

  • 1/2 cup (120ml) filtered water
  • 2 cups (56g) firmly packed cilantro leaves (2 large bunches)
  • 1 cup (28g) firmly packed mint leaves (1 large bunch or 2 small)
  • 1/4 cup (35g) raw unsalted cashews, soaked
  • 2 tablespoons fresh lime juice, plus more to taste
  • 2 tablespoons diced red onion (1 thin slice)
  • 2 teaspoons minced fresh ginger (1-inch piece), plus more to taste
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Celtic sea salt
  • 1/2 teaspoon ground cumin
  • 1 small green chile, ribbed and seeded, plus more to taste
  • 2 medium cloves garlic 

Instructions

  1. Place all of the ingredients into the blender jar of the KitchenAid® Pro Line® Series Blender. Secure the lid, remove the center lid cap, and insert the tamper.  Turn the machine to variable speed 9 or 10, and using the tamper process on high for 30 to 60 seconds until smooth and creamy. Tweak the lime juice, ginger, and chile to taste.
