Crazy-Amazing Curried Sweet Potatoes

These curried sweet potatoes are so easy to make and have a flavor that is mind-blowing delicious . Seriously.

These curried sweet potatoes would have to be one of my all-time favorite side dishes.

If you are looking for delicious sweet potato recipes for the holidays, this this is it!

This simple sweet potato offering has a happy hum of spices that tickle your taste buds. As this is a side dish, I’ve kept the flavors subtle so that this dish doesn’t overpower whatever you serve it with. Use mild curry powder to keep the heat tame, or increase the amount to 1 1/4 teaspoons to punch up the flavors. If you use hot curry powder, reduce the amount to 1/2 teaspoon, and add gradually to taste until you get the balance just right.

For an additional note of flavor, use Herbamare seasoning in place of the salt.

If you’re not a fan of cilantro, substitute with flat-leaf parsley. For the best presentation, steam your sweet potatoes just until they are fork tender and robust, or you will end up with a mushy mess when you toss the onion and spice mixture through. Or, lean into the mush, and serve a mash!

If you’re in Australia, this dish works beautifully with steamed Japanese pumpkin. Those of you in the U.S will want to use orange-flesh sweet potatoes.

Just a note about the turmeric. Be careful, it can stain your counter tops. But don’t let that stop you from making these curried sweet potatoes because they are absolutely phenomenal.

I threw a surprise party for my mother’s 60th birthday about 15 years ago and I served these curried sweet potatoes to 200 of our closest hungry friends.

I got more requests for the recipe for these curried sweet potatoes than for the chocolate cake!

Crazy-Amazing Curried Sweet Potatoes

Ingredients

  • 6 cups (900g) peeled and cubed orange-flesh sweet potato  (1-inch pieces)
  • 1/4 cup  grapeseed oil (or olive oil)
  • 1 teaspoon  (4g) brown mustard seeds
  • 1 tablespoon (15g) minced fresh ginger
  • 1 tablespoon (12g) minced garlic (3 cloves)
  • 1 teaspoon (2g) mild yellow curry powder (See Notes)
  • 1 teaspoon (2g) ground turmeric
  • 1/4 (0.5g) garlic powder
  • 1/8 teaspoon (0.25g) freshly ground black pepper
  • 1 cup (150g) diced yellow onion
  • 1 teaspoon (8g) Celtic sea salt, plus more to taste
  • 1 tablespoon (6g) nutritional yeast
  • 1 teaspoon (5ml) fresh lime juice
  • 1/4 cup (12g) finely chopped cilantro (or flat-leaf parsley)

Instructions

  1. Fill the bottom of a large pot with about 3 inches of water, and insert a steamer basket. Bring the pot to a boil, add the sweet potato, cover the pot, and steam for about 7 minutes, until the potato slices are just fork tender. (You don't want the sweet potato to be too soft or it will become a mushy ball when mixed together.)

  2. In a large wok over medium heat, warm the oil, and sauté the mustard seeds for a minute until they start to pop. Add the ginger, garlic, curry powder, turmeric, and black pepper. Stir in the onions with a pinch of the salt, and sauté for about 5 minutes until the onions are soft and translucent. Stir in the nutritional yeast and the lime juice.

  3. Add the steamed sweet potato, cilantro, and the remaining salt, and use two wooden spoons to gently toss until the sweet potato is evenly coated and warmed through. Season with additional salt, to taste.

Curry Powder:

This recipe has been developed using mild curry powder. If you use hot curry powder, use half the amount, and add gradually to taste.

  1. I’ve been thinking of naturally chelating my son with autism through incorporating foods like cilantro and garlic in his diet. He already loves sweet potatoes and garlic, so I’m gonna have to try this one. Thanks 🙂
