Sensational Slow Cooker Sweet Potatoes
Throw this tasty slow-cooker recipe together in no time and have a delicious side dish to share.

Ingredients
- 1/4 cup extra-virgin olive oil
- 4 cups peeled and diced orange-flesh sweet potato
- 2 teaspoons minced garlic (2 cloves)
- 1/4 cup coconut sugar
- 1/2 teaspoon yellow curry powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon red pepper flakes
- 1 teaspoon Celtic sea salt
- 1/2 cup finely chopped cilantro
Instructions

In a large bowl, stir all of the ingredients together except the cilantro.

Transfer to the slow cooker, and select the high setting to cook for 2 to 3 hours, or the low setting to cook for 4 to 5 hours until the potatoes are cooked through. Periodically, stir the ingredients to ensure the potatoes remain evenly coated with the oil and spice mixture.

Once the potatoes are cooked, stir through the cilantro, season with salt and pepper to taste, and serve family style.

This IS delicious. You could easily replicate the flavour of this by cooking in a wok or deep skillet etc. I would start with less oil. You will just have to stand there and keep turning on medium heat. Let me know how you go. This dish is yummy.
If i can’t get coconut sugar ,can i use soft brown sugar ?

Does it really need the sugar in it?
Unfortunately, yes. You get a really delicious caramelized flavor. You could try reducing it, though.
My entire family loved this and I will make this again. I did not use the entire amount of sugar. I used about 1 TBSP of turbinado and brown since we did not have coconut sugar on hand and everyone loved it. I think that anyone averse to any sugar products could easily leave it out entirely. Sweet potatoes are sweet enough without sugar. I used our slow cooker on high for 2 hours. That translates to cooking covered for 30 minutes in a 325 oven.

What kind of curry powder does this recipe call for?
I know curry powders can vary. I used a mainstream standard curry powder blend from any grocery store. I used the Frontier Co-op blend.
