Because fresh figs are in season in California, I thought I’d share this figgy pudding green smoothie from the book. Even though we’re a couple of months away from thanksgiving, I’m celebrating early with this scrumptious dessert-style smoothie. This blend is rich, creamy, sweet, super tasty, and loaded with nutrients. Rich in minerals, figs supply potassium, calcium, iron, and copper, and are good sources of vitamins A, E, and K. Figs also contain a proteolytic enzyme that aids digestion. Yeah, tell yourself that as you blend up another, and another, and another this holiday season. Figgy Pudding Smoothie

Ingredients

  • 2 cups unsweetened coconut milk (in a carton)
  • 2 cups chopped fresh or frozen figs
  • 1 cup firmly packed baby spinach
  • 1 medium-sized frozen sliced banana
  • 1 teaspoon natural vanilla extract
  • 1 teaspoon ground cinnamon, plus more to taste

Instructions

  1. Throw everything into your blender, and blast on high for 30 to 60 seconds until smooth and creamy.
