Chai-Spiced Pear Oatmeal
This chai-spiced pear oatmeal is vegan and gluten-free, and is a delicious easy breakfast, dessert, or snack. Use a ripe pear for the sweetest flavor.

Ingredients
- 2 cups filtered water
- 3/4 cup rolled oats
- 3/4 teaspoon ground cinnamon, plus more to serve
- 1/2 teaspoon minced ginger
- 1/8 teaspoon ground cardamom
- Pinch of Celtic sea salt
- 1 ripe pear, spiralized
- 1 cup unsweetened almond milk, plus more to serve
- 1 tablespoon maple syrup, plus more to serve
- 1/2 teaspoon natural vanilla extract
- 2 tablespoons roughly chopped raw walnuts
Instructions

In a medium saucepan, bring the water to a boil, and stir in the oats, cinnamon, ginger, cardamom, and salt, reduce the heat to medium-low, and simmer, stirring periodically, for about 5 minutes, until the water has been absorbed. Add the spiralized pear, almond milk, maple syrup, and vanilla, and stir to combine. Increase the heat to high, bring to a boil, then reduce the heat to low, and simmer for another 10 minutes, until the milk has been absorbed, and the oats are cooked through and creamy.

Divide the mixture between two bowls, and top with the chopped walnuts and a sprinkle of cinnamon. Pass additional almond milk and maple syrup at the table.
