This vegan popcorn with nacho cheese flavor is from the Eaternity cookbook by Jason Wrobel is so ridicously delicious that we have been making batches all summer long for our games nights and movie watching.

All of our friends have been freaking out about it, and I’ve printed off the recipe more times than I can count. When I first read the recipe I thought, “that makes a lot of popcorn! We’ll never eat it!” Well, there’s a reason why the recipe is so generous, because it is so good there will never be enough!

This book is extra special to me because I bumped into Jason at the beginning of his cookbook journey outside my local UPS store as I was mailing off the final pages of my first book. To see his dream realized 3 years later is a joy.

His fabulous book contains 150 vegan comfort food recipes infused with superfoods all categorized by health goal. Jason draws on the latest health research and shares his top foods for optimal health. I learnt a lot about foods I’ve head of but never used from reading this book, and I’m now going to start incorporating some new superfoods and supplements into my diet.

For those with dietary restrictions, all of the recipes are coded to help you choose gluten-free, soy-free, nut-free, and oil-free dishes. There are 14 chapters to eat for: better sex, good sleep, weight loss, happiness and good moods, more energy, detoxification, brain power, more muscle, immunity, strong bones, great skin, strong eyesight, a healthy heart, and less stress.

There are kick-ass vegan spins on family favorites like burgers, nachos, chocolate chip pancakes, cookie dough, and ice cream. But, this book goes beyond the usual fare and serves up some really interesting dishes. Some of my personal favorites are the: kombucha smoothie, chestnut & kabocha squash dip, quinoa falafel with avocado tahini sauce, cilantro lime pumpkin pesto pasta, cauliflower lentil tacos, coconut lemongrass risotto, sweet sapote sorbet, and dragonfruit soda. These more exotic dishes will elevate your plant-based experience to ethereal.

I found choosing a recipe challenging, as there were a ton that I wanted to share with you. I settled on this popcorn recipe in response to a growing number of emails I’ve received from you asking for healthier snack alternatives.

Jason says, “This is the ultimate healthy popcorn for movie night. The addition of vitamin B12– rich nutritional yeast, chili powder, cumin, and garlic makes this a cheesy, spicy snack that will attack your hunger and rev up your metabolism. I like sneaking this snack into the movie theatre. It’s a way healthier, low-calorie alternative to the fatty, artificial popcorn you typically find at the concession stand. “ He also suggests jazzing up the base recipe with curry powder or a few shakes of hot sauce. I don’t think it needs it. It is juuuust perfect the way that it is.

Nacho Cheese Vegan Popcorn

This vegan nacho spicy cheese popcorn from Jason Wrobel’s Eaternity cookbook is a delicious healthy snack.

  1. In a large saucepan over medium-high heat, warm the grapeseed oil. Add the popcorn seeds and place the lid on the pan. Shake vigorously to coat the kernels with oil. When the corn starts to pop, shake the pan constantly until the popping stops, about 5 to 7 minutes. Remove the pan from the heat, remove the lid, and transfer the popcorn to a large bowl.
  2. In a small bowl, combine the nutritional yeast, chili powder, cumin, garlic powder, salt, and cayenne pepper.
  3. Toss the melted coconut oil and spice mixture through the hot popcorn, and serve immediately.
