This raw vegan semi-dried tomato and macadamia pesto is super easy and seriously delicious. Just throw everything into your food processor.

Semi-Dried Tomato Macadamia Pesto

I got this fantastic semi-dried tomato and macadamia pesto dip from The Australian Macadamia Society. This pesto is so easy to throw together in less than 10 minutes in your food processor. You just will not believe something so easy can have so much flavor.

This pesto is sensational served with veggie sticks, crackers, or tortilla chips, it’s delicious tossed through pasta or zucchini noodles, and makes a wonderful spread for sandwiches and wraps.

Semi-dried tomatoes packed with olive oil in jars are commonly found in Australian grocery stores. But, they’re quite difficult to find in American grocery stores. I’ve only been able to source them at specialty stores or online. Don’t use sun-dried tomatoes. They’re just too rich in this dip.

Find semi-dried tomatoes, and don’t miss making this pesto. It’s divine.

Semi-Dried Tomato Macadamia Pesto

  1. Throw everything into a food processor fitted with the s blade, and pulse until rustically combined. Tweak basil, salt, and pepper to taste. 
  2. Serve as a dip with vegetables or crackers, or stir through pasta with olive oil.

  4. Silly question… but, we are are using two different kinds of oils in this recipe right? Olive and CP Extra Virgin? Or can I soak the sundried tomatoes in CPEVOO?

    1. Hey Piggy Victoria
      Not a silly question. I was a bit confusing in my instructions. Sorry about that.
      If you purchase tomatoes in good olive oil you can use some of that oil.
      But I prefer to use my own CPEVOO.
      Soaking them in that is a fantastic idea.
      Just add the oil gradually so the dip doesn’t get too oily and it doesn’t overpower the natural flavour of the semi-dried tomatoes.

          I soak all of my raw nuts in order to make them easier to digest. Macadamias only need a couple of hours. But this is not essential in order to enjoy this recipe. You can just throw them in raw.
