This raw chilled avocado soup is vegan, gluten-free, and paleo-friendly, and has a delightful light flavor and beautiful creamy texture and color. Best of all, you can blend this soup up in less than 10 minutes.

I got this chilled avocado soup recipe out of the Organic Avenue cookbook by Denise Mari.

The book opens with Denise’s personal journey from eating a standard American diet of meat and fast foods, to becoming vegetarian, then vegan, then raw, and the foundation behind the organic avenue franchise. After losing her younger sister to cancer, Denise became committed to spreading the message of clean living and juicing with the masses. After setting up the first juice cleanse program in her apartment, and peddling her fresh juices from a backpack in the Lower East Side of New York, she transformed this lifestyle into the Organic Avenue franchise.

There is some great information about the importance of raw foods, live enzymes, chlorophyll, alkalinity, sprouting, superfoods, top sources of plant-based protein, exercise, and meditation.

If you’re looking to do a detox program, the chapter on cleansing is fantastic – the whys and hows, pre- and post cleanse guidelines, and instructions for dry skin brushing, epsom salt baths, saunas, massage, enemas, and colonics. Denise also answers commonly asked questions such as: how long to cleanse, when to cleanse and when not to cleanse, what to do when feeling hungry on a cleanse, what to do if you experience illness and issues while cleansing, and how to transition back to whole foods after a cleanse.

The cleanse menus and programs are fabulous. There are different programs for different needs:

  • The 7 day program including booster shot, juice, vegetable juice, salad, entrée, dessert, and milk.
  • A deep cleanse 7 day program with booster shot, fruit or carrot juice, green juice, tonic, vegetable juice, green juice, and milk.
  • A Go Green 7 Day Program containing chlorophyll-rich liquids

There is a guide to guide you on which programs are suitable for you.

The recipes are very simple and easy to follow. There are wonderful booster shots like Blue-Green Algae, Wowing Wheatgrass, Ginger Gem, Power Pom, Allowing Aloe, Loveable Lemon; and strengthening vegetable juices like Caring Carrot, Cooling Cucumber, and Might Love Green juice; and sweet juices like Precious Pear, Wonderful Watermelon, and Crazy Love Juice. The tonics are awesome, including the Generous Ginger Lemonade, Truth Tonic, and Master Tonic; and there are smoothies like Cheerful Chai, Champion Chocolate, Glorious Green, Magical Matcha, and Healthy Hibiscus Chia. There are also awesome recipes for homemade almond, cashew, and coconut milk, and flavored milks like a sweet strawberry banana milk and green milk.

There are also delicious salads and dressings in the book. Some of my favorites include: Big Greek Salad with Cashew Tzatziki Dressing, Amazing Arugula with Carrot Cheese and Caesar dressing, Sun-Kissed Kale and Collard Salad with Coconut-Miso Dressing, Mighty Mushroom and Fennel Salad with Arugula and Lemon-Mint Dressing, and Calming Cauliflower salad.

If you’re into making nut-based cheeses, try the simple cashew cheese, macadamia cheese, carrot cheese, pine nut parmesan, macadamia and cashew feta.

The main dishes are pretty yummy, too. Try the Thai wrap with Almond Cream and Sweet and Spicy Prune Dipping Sauce, Magic Mushroom Wrap with Creamy Kraut Filling, Fanciful Falafel with Lebanese dip, and Pasta with Truffle Cream Sauce.

I tried the Moroccan Cashews, Chipotle Pistachios, Cherished Chia Tapioca, Cool Coconut Yogurt, Heavenly Cardamom Chocolate Hemp Pudding, and Chocolate Macaroons for snacks.

I love this avocado and mint soup because it’s super easy and loaded with nutrients and alkalizing detox powder. Avocados are rich in luteins and folate, both important for heart health, and contain the magical antioxidant glutathione, awesome for scavenging free radicals.

If you want to be healthier, more energized, focused, balanced, and inspired, there are some great tips and recipes in this book.

Let me know what you think of this chilled avocado soup.
