Beet Latte

Beet Latte

This beet latte you can make in your blender is really easy, super creamy, and has an exquisite flavor. Even beet haters love this latte!

Ingredients

  • 2 cups (480ml) homemade unsweetened almond milk (strained, or commercial milk, see note)
  • 1/4 cup (43g) firmly packed pitted dates (4 dates) or 2 tablespoons Lakanto (for sugar-free)
  • 2 teaspoons beet powder
  • 1 teaspoon natural vanilla extract
  • 1 teaspoon fresh minced ginger, plus more to taste (optional)

Instructions

  1. Throw all of the ingredients into your high-speed blender. Secure the lid, and blend on high for 5 minutes until piping hot. (For conventional machines, blend on on high for about 60 seconds until smooth and creamy. Transfer the mixture to a small saucepan, and warm on medium-low heat for 2 to 3 minutes until hot. Enjoy immediately.
