Peach Apricot Carrot Smoothie

This carrot smoothie with orange juice, peaches, and dried apricots, is delicious, super creamy, and is a fantastic immune-boosting breakfast or snack.

Ingredients

  • 1 cup (240ml) freshly squeezed orange juice
  • 1/2 cup (120ml) filtered water
  • 1 cup (150g) peeled and chopped carrots
  • 2 medium dried apricots
  • 1/8 teaspoon ground cardamom, plus more to taste
  • 3 cups (480g) frozen peaches

Instructions

  1. Throw all of the ingredients into your blender in the order listed, secure the lid, and blend on high for 30 to 60 seconds until smooth and frosty.
