This raw chilled avocado soup is vegan, gluten-free, and paleo-friendly, and has a delightful light flavor and beautiful creamy texture and color.

Ingredients

  • 2 1/2 cups (600ml) filtered water
  • 1 cup (44g) firmly packed baby spinach leaves
  • 1 small avocado, pitted and peeled
  • 1/2 English cucumber, roughly chopped
  • 1/2 cup (20g) firmly packed mint leaves
  • 2 tablespoons (30ml) fresh lime juice, plus more to taste
  • 1 1/4 teaspoons (7.5g) Celtic sea salt, plus more to taste
  • 1/4 teaspoon (0.5g) freshly ground black pepper, plus more to taste
  • 1 clove garlic

Instructions

  1. Throw all of the ingredients in your blender, and blast on high for 30 to 60 seconds until smooth and creamy. Add more water to thin out the soup if desired. Tweak the mint, lime juice, salt, and pepper to taste, and serve immediately.
