Carrot Ginger Soup

This super easy carrot ginger soup uses just 6 ingredients and is vegan and gluten-free. This recipe is kid-friendly and simple but has fabulous flavor.

  1. In a medium saucepan over medium heat, warm the olive oil, and sauté the onion with a pinch of the salt for about 5 minutes until soft and translucent.
  2. Add the broth, carrots, ginger, and salt, increase the heat to high, and bring the mixture to a boil. Reduce the heat to medium-low, and simmer for 15 to 20 minutes, until the carrots are fork-tender.
  3. Transfer the soup to a blender, and blast on high for 30 to 60 seconds, until smooth and creamy.
  4. Serve with a dollop of yogurt or sour cream.
