The best cauliflower rice that is an easy, delicious, low carb, grain-free alternative. Serve with veggies, curries, stir-fries or in abundance bowls.
Preheat the oven to 400°F (200°C).
Line a large baking tray (with a lip) with a silicone liner or parchment paper.
Throw the cauliflower florets into a food processor fitted with the S blade and pulse until it has the consistency of couscous.
In a large bowl, mix the processed cauliflower with the oil, salt, and pepper until well combined.
Transfer the “rice” to the prepared baking tray, and bake for about 15 minutes. Remove from the oven, stir with a spatula or wooden spoon, and return to the oven for another 15 to 20 minutes, until the cauliflower begins to brown.
