Red Velvet Pudding

This red velvet pudding is vegan and gluten-free, and is sweet and delicious. It also contains hidden beets and beet greens for added nutrition.

  1. Pour the apple juice and almond milk into the blender jar of the KitchenAid® Pro Line® Series blender, and then add the strawberries, cacao powder, beets, beet greens, maple syrup, and vanilla. Secure the lid, and blend on variable speed 10 or 11 for 40 to 60 seconds, until smooth. Add the avocado, secure the lid, remove the center lid cap, insert the tamper, and then process of high for 10 to 20 seconds using the tamper to guide the ingredients through the blades until smooth and creamy.
  2. Transfer the mixture to a bowl, cover, and chill in the fridge for two hours to thicken. Alternatively, spoon into individual cocktail glasses.
  3. Serve topped with fresh sliced strawberries.

Recipe Notes

*Note: the beet and beet greens may grow more assertive if the pudding is not served within 6 to 8 hours of making.
