Savory Sun-Dried Tomato Smoothie

This savory vegan sun-dried tomato cilantro smoothie tastes like a delicious gazpacho.

Ingredients

  • 1/2 cup (120ml) filtered water
  • 2 cups (360g) chopped tomatoes (2 medium)
  • 1 cup (40g) firmly packed cilantro leaves
  • 1 medium avocado, peeled and pitted
  • 1/2 cup (70g) ribbed, seeded, and chopped red bell pepper
  • 2 tablespoons chopped sun-dried tomato
  • 1 1/2 tablespoons fresh lime juice, plus more to taste
  • 1/2 Serrano chile, ribbed and seeded, plus more to taste
  • 1 teaspoon Celtic sea salt, plus more to taste​
  • 2 cups (250g) ice cubes

Instructions

  1. Throw the water and the tomatoes into the blender first, followed by the rest of the ingredients, including any boosters. Blast on high for 30 to 60 seconds until smooth and creamy. Tweak lime juice, chile, salt, and Tabasco (if using).
